St. Augustine Nights of Lights 🎄
Nights of Lights is officially underway and the historic district looks beautiful! The white lights cover the entire downtown area and make for a great evening walk or drive. If you have not gone before, this is a perfect time to visit. Be sure to book any tours in advance and get there early to secure parking!
Ways To Give This Season 🤝
We love our community, and this season is a wonderful opportunity to support local charities and give back! Here are a few places accepting food and clothing:
Feeding Northeast Florida gets food to where it is needed in Jacksonville and surrounding counties. You can drop off donations at 5245 Old Kings Road from 7 a.m. to 2 p.m. Monday through Friday. (Paper products, cooking oils, cereal and peanut butter are needed.)
Lutheran Social Services of Northeast Florida accepts nonperishable, nonexpired food at 4615 Philips Highway in Jacksonville during business hours: 8 a.m. to 5 p.m. Monday through Thursday and 8 to 11:30 a.m. Friday. No appointment is required. For now, they need diapers and baby formula.
BEAM in Jacksonville Beach accepts food bank donations from 10 a.m. to 4 p.m. Monday through Friday at its center behind the 7 North Thrift Store at 318 7th Ave N. The ministry specifically requests canned fruit, vegetables and peanut butter.
The Mandarin Food Bank welcomes nonperishable foods any day the food bank is open — 9 to 11:30 a.m. Monday, Wednesday and Friday. The food bank even accepts front porch drops until dusk most days. The organization needs canned meat (Spam, chili, canned ham and chicken, hash, tuna); spaghetti sauce and pasta; soups of all kinds; peanut butter and jelly; and rice.
The Salvation Army accepts nonperishable food items and clothing at local Salvation Army centers: Jacksonville Citadel Corps and the Jacksonville Social Services, both at 900 W Adams Street. They accept canned goods, pasta and peanut butter. Avoid donating perishable items, expired products or food that is already opened.
Pet of the Month 🐾
This month’s featured pet is available for adoption at Jacksonville Animal Care & Protective Services:

Packer
The shelter staff think I am about 2 years and 10 months old. Calm, well-mannered Packer has been patiently wagging his tail hoping someone will notice him since the day he arrived at ACPS. A 55-Ib. "low-rider," Packer is the perfect size for car rides, long walks, and quality time with his people. His volunteer friends report that he is super people-friendly, affectionate, takes treats gently and is simply a joy to be around. This boy's personality shines as brightly as his gorgeous black coat and will most definitely brighten your day!

1
Don’t use fresh brioche...
for this recipe, you want a loaf that is a day or two old. If it’s too soft, it will fall apart quickly in the wet batter.
2
Give the bread enough time in the milk and egg mixture...
to soak up as much of it as possible. For tougher Texas toast bread, you can let it soak for 5 minutes. For softer brioche, 30 seconds is sufficient.
3
Cook on medium heat...
for the perfect temperature. If it’s too hot, the outside will burn quickly without the inside cooking all the way. This creates a soggy center and uneven texture.
4
Use whipped cream cheese.
Because the brioche is very delicate when uncooked, using whipped cream cheese makes spreading so much easier without potentially breaking up the bread.
Notes

1
In a medium sized bowl, combine the whipped cream cheese with the honey and strawberries, set aside.

2
In a shallow bowl, add the milk, eggs, vanilla extract, cinnamon and salt and whisk to combine.

3
Spread the cream cheese mixture on 6 slices of brioche, then seal with the other 6 slices.

4
Heat a skillet over medium heat. Add ½ tablespoon butter to the skillet.

5
Dip the stuffed brioche in the egg and milk mixture, making sure both sides are coated well. Immediately transfer from the bowl to the skillet. Cook for 3-4 minutes until edges become golden brown, then flip and cook on the other side for an additional 3-4 minutes. Repeat for the remaining 5.

6
Remove from heat and serve with desired toppings like extra strawberries, syrup, butter, whipped cream, or powdered sugar!
Instructions
8 ounces whipped cream cheese
2 tablespoons honey
¼ cup strawberries diced
12 slices brioche bread one loaf
1 cup milk
4 eggs
½ teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon salt
3 tablespoons butter

This one is always a hit. French toast with a creamy strawberry filling in the middle. It’s super easy to make and feels a little extra without much effort. Perfect for slow mornings at home.
